Strawberry Rose Sorbet Float Recipe

Ingredients

1½ cups strong Rosy Mood tea brewed with 3 tea bags (reserve ½ cup chilled Rosy Mood tea for serving)
1 cup organic cane sugar or honey, to taste
1 tbsp fresh lemon juice
Pinch sea salt
4 cups frozen strawberries
Sparkling water, for serving

Directions
  • Brew the tea by using proper extraction and safety. Bring water to a full boil. Pour boiling water over Rosy Mood tea bags, cover, and steep for 10–12 minutes. 
  • When steeping is complete, squeeze the tea bags thoroughly and compost or discard.
  • Sweeten while the tea is still warm by whisking in sugar or honey until fully dissolved. 
  • Taste and adjust; tea should be slightly sweeter than desired, as freezing dulls sweetness.
  • Add brightness if desired by stirring in lemon juice and a pinch of sea salt. 
  • Transfer the finished tea infusion to a covered container and place directly into the refrigerator to chill completely (at least 2 hours). Do not add ice to hot tea; allow it to chill fully before adding ice. Remember to reserve half a cup of tea to add to your float base. 
  • Once the tea is fully chilled, blend the tea mixture with the frozen strawberries until smooth and creamy.
  • Freeze the sorbet by pouring the blended mixture into a shallow dish and freeze for about 4 hours, or until scoopable.
