Moon-Inspired Herbal Pancakes and Cookies

It was a full moon day, so I decided to create herbal pancakes and cookies inspired by the moon. This is how I often start my kitchen creations. Intuitively, I choose from my collection of natural ingredients. I am inspired by nature and I like to create from feeling. I rarely follow recipes.

Colors are very important in my work. I like to use natural, botanical products like beetroot powder, aronia powder, and spirulina to achieve vibrant color without compromising on health. In these Moon Herbal Pancakes and Moon-Inspired Cookie recipes, I mixed in cacao and turmeric to produce brown and yellow colors, brown representing the dark side of the moon and yellow representing the light side.

As I mentioned earlier, my kitchen creations are intuitive, artful, and not rigid. To give you an impression and guide as to how to make the moon bakings, here are my recipes.


Moon Herbal Pancakes


Ingredients

300 grams buckwheat flour
2 tablespoons egg substitute
500 mL rice milk
½ tablespoon of the beetroot, aronia, or spirulina powders for each pancake
Cacao powder for coloring
Turmeric (Curcuma longa) rhizome powder for coloring

Directions
  • Heat a frying pan on a low heat.
  • Mix the ingredients in a large bowl.
  • Divide the batter into 2 parts and add a little of the cacao to one and a little turmeric to the other. Use as much as you would like to create subtle or vibrant color.
  • Put a bit of vegan butter and 1/8 of the batter onto the pan. 
  • Cook for 2 minutes before carefully flipping the pancake. Cook for another 2 minutes on the other side.
    Repeat with the rest of the batter.

Moon-Inspired Cookies

 

Ingredients

120 grams plant-based butter
70 grams cane sugar
1 tablespoons vanilla extract
100 grams almond flour
100 grams wheat flour
Pinch of salt
Cocao powder for coloring

Directions
  • Mix the plant-based butter, cane sugar, and vanilla extract until it becomes a bit creamy. 
  • Add the almond flour, wheat flour, and a pinch of salt.
  • Knead into a firm dough. 
  • Divide dough in half and add cacao powder to half the dough until desired color is achieved.
    Roll the dough into a roll and wrap it in foil.
    Place the roll of dough in the refrigerator for at least an hour so that it can rest.
  • Flatten the dough and cut out the shapes of the current moon cycle.
    Bake the cookies for 12-15 minutes at 180° C (top and bottom heat), or until the edges are light brown.

In Closing, 

As a photographer I portray people in their natural essence. Also, in my paintings there is a natural touch to things, both in the technique and in the subject matter. For example, I love to draw animals and humans reunited—just how I like to imagine them to be. Besides using my camera and paint as a medium, I create with ceramics. And I recently started weaving.

Although I express myself through various techniques and mediums, all my work has something in common—a raw, natural, and pure appearance. Nature is my greatest inspiration. This comes through in my cooking as well. I love to create artisanal food art with pure ingredients and natural coloring. Sometimes I leave the process to chance, so nature can reveal her signature in shape and color. On top of the artistic and culinary qualities of food, I’m learning more about the herbal properties of plants. The presentation of the food—preferably on my own handmade ceramics—and the photography of my culinary creations—form the final result.
